The PalmLookout project is an open source project that wants to develop PIM applications and conduits which are 100% compatible with Microsoft Outlook. At the moment there is a alpha/beta version of a memo/note app. It supports editing notes and categories.

It uses its own DBs so no PIM data of your Palm should be damaged. Notes can’t be synced because there are no conduits, but they will be developed as soon as the other parts (datebook, etc.) are ready.

So go to http://palmlookout.sourceforge.net/ and download the (on my Tungsten C stable and usable) beta of the memo app, register in the forum and send the developer your wishes and bugs to keep this project alive! It is very young and I hope that it won’t be discontinued like many other great open source ideas for Palm OS.
